Melty cheese and crispy cheese? Sign me up.

As a kid I reheated leftover pizza in the microwave once. Once. I learned that lesson quick. Microwave makes pizza worse.

After that I used the oven, which works but takes forever. Back in high school, I was hanging out with my girlfriend, watching Queer Eye for the Straight Guy and Ted recommended reheating leftover pizza over medium-low heat in a pan with olive oil. It’s a great method! But over time , I added some wrinkles.

It’s nothing crazy. Just a couple of steps to the process that compensate for bland crust and adds crispy cheese to the equation. I use a nonstick pan and add a blend of salt, pepper, garlic powder, onion powder and MSG to the heated olive oil before the pizza goes in and I sprinkle more on top of the cheese. After a couple of minutes, the crust is crisped up and I flip it over so the cheese is down and leave it alone until i can see brown on the edges, about another minute. At that point you can flip it over and admire your work but i’d recommend turning the heat off and plopping it on a wire rack to cool down enough to handle.

This is a great way to change up your perception of pizza you’ve already eaten. Move over cold pizza, Pan-fried pizza is the new king of leftover pizza.
